Wabbits

More people chase Cotton Tail Rabbits than any other game animal in the United States. My Dad taught me to hunt them using a 22 rifle. Many people use shotguns in populated areas or when they run the rabbits with dogs. Cotton Tail Rabbits are found in a wide range of terrain. We chase them around willow brush piles and high mountain western sage brush.

My dad’s photo albums are full of picture of them chasing rabbits with bow and arrow in their younger days. I wanted to try this and we committed to get out early this winter before the snow got so deep you couldn’t retrieve your arrows. Then my Dad fell ill and couldn’t go. My disappointment was rescued by a couple of my Dad’s hunting buddies.
They’d haul me along if I would agree to cook lunch. Just because my Dad is a Camp Jack doesn’t mean I am but I guess they figure it is in my genes.

It was 8 degrees when we stepped out of the pickup. I was lucky enough to take a couple of these tasty critters using a vintage Bear Archery recurve bow that I’d persuaded my Dad to let me take. Using that equipment made it even more fulfilling but I missed having Dad along.
Boy was I glad I’d been assigned cook because the warm soup and drink was very welcome after a few hours of hiking around chasing bunnies.  Tailgating with the Camp Chef Teton stove was simple.

We clean our rabbit’s right in the field. Rabbits tend to have lice hitching rides with them so we drag them along behind us on a rope and then skin them as soon as we get back to the truck.

I really like to eat rabbit. When skinned they look like mini deer. Cooking them is simple. Cut them up in pieces like you would a chicken. Dredge them in flour. Olive oil heated up in a skillet is used to brown the meat. Then I reduce the heat, cover them in onions and replace the lid and simmer on low heat for an hour. They are deliciously tender.

    Great day and great chasing rabbits, the company was good and the food was simple but better. We had good old CAMPBELL CHICKEN NOOLDE SOUP, with the addition of chunks of garlic and basil chicken breasts, with tomato, and frozen peas we had a great meal.

    That Teton stove is the cats meow. It is just the right size for my style of tailgating.

    Rabbit etouffee is pretty good, too.
